July 11: National Blueberry Muffin Day
What are you going to do with all of those juicy blueberries from your latest blueberry picking trip? Make muffins, of course. Blueberries also freeze well, as do blueberry muffins. Wrap the cooked and cooled muffins individually before freezing. Then you can grab one when you're one the way out the door for a tasty and homemade muffin to enjoy on your coffee break at work.
Blueberry Muffin Recipe
* Blueberry Maple Muffins
* Blueberry, Coconut and Macadamia Nut Muffins
Jazz up your favorite blueberry muffin with:
* A sprinkling of oats and brown sugar on the top of the muffin batter
* A whole walnut or pecan
* Dark chocolate chips in the batter if you like chocolate and fruit
* Raw sunflower seeds for extra Vitamin E
* Milled flax seed a non-animal source of omega-3 fatty acids.
